Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup milk (whole or almond milk)
  • 1 large egg
  • 1 teaspoon alcohol-free vanilla extract
  • 2 tablespoons pure maple syrup
  • 2 tablespoons sesame seeds (optional)

Method
 

  1. Preheat oven to 375°F (190°C) and prepare muffin tin with paper cups
  2. Whisk flour, sugar, baking powder, and salt in a large bowl
  3. Melt butter and mix with milk, egg, alcohol-free vanilla extract, and pure maple syrup
  4. Pour wet mixture into dry ingredients; stir gently until combined
  5. Fold in optional sesame seeds
  6. Divide batter into muffin cups
  7. Bake 15 minutes until golden and set
  8. Remove immediately to avoid steam buildup

Notes

Use whole wheat flour for extra fiber
Honey can substitute granulated sugar
Reduce salt to ¼ teaspoon for low-sodium
Almond milk makes them dairy-free
Chickpea puree (1/3 cup) replaces egg for vegan
