- Gradually add the wet ingredients to the dry, mixing until just combined. Fold in the diced bell pepper and sautéed spinach.
- Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let the muffins cool slightly before removing from the tin and serving warm.
