Ingredients
  

  • Sago pearls (small), 1 cup
  • Coconut milk (full-fat, fresh or canned), 2 cups
  • Sugar (white or organic cane), 1/4 cup
  • Water, 1 cup
  • Fresh lime zest, 1 teaspoon
  • Vanilla extract (pure), 1 teaspoon
  • Ice cubes, as needed
  • Fresh mint leaves, few sprigs (optional garnish)

Method
 

  1. Bring 1 cup water to a boil in a medium saucepan. Add sago pearls, reduce heat, and simmer 10 minutes, stirring occasionally. Drain and rinse under cold water.
  2. In the same saucepan, combine 1 cup water and sugar. Heat over medium until sugar dissolves, 2-3 minutes. Let cool slightly.
  3. Stir in cooked sago, coconut milk, lime zest, and vanilla. Chill for 15 minutes.
  4. Serve over ice, garnished with fresh mint.

Notes

Use Japanese or Chinese sago pearls for best texture
Fresh coconut milk intensifies flavor; canned is acceptable
Adjust sugar to taste based on coconut milk's natural sweetness
