Ingredients
  

  • 2 cups unsweetened coconut milk
  • 1 cup almond milk
  • ½ cup toasted cashews
  • 4 tbsp honey
  • 1 tbsp shredded coconut
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • 3 scoops vanilla ice cream
  • Optional: toasted coconut flakes & cashew halves for garnish

Method
 

  1. Toast cashews in a skillet until fragrant
  2. Pour coconut milk and almond milk into a blender
  3. Add honey, shredded coconut, vanilla extract, and sea salt
  4. Blend on high until smooth
  5. Add vanilla ice cream and blend until fully combined
  6. Serve chilled and garnish as desired

Notes

Toast cashews for optimal crunch
Use oat milk instead of almond milk for sweeter profile
Adjust sweetener to taste
Freeze leftover shake for 10-15 minutes before serving
