- Wash and dice peaches into uniform cubes.
- Sauté jalapenos in a heavy-bottom saucepan over medium heat until fragrant (2 minutes). Add diced peaches and stir.
- Add apple cider vinegar, honey, water, salt, cinnamon, ginger, nutmeg, and red pepper flakes. Stir until honey dissolves.
- Bring to a boil, then reduce to a simmer. Cook uncovered for 40-45 minutes until mixture thickens and reaches 220°F on a candy thermometer.
- Test for doneness by placing a small amount on a chilled plate; it should gel. If too runny, simmer longer.
- Pour into sterilized jars, seal, and store in the refrigerator.
- Let sit 24 hours before serving.
