Ingredients
  

  • 8 cups fresh peaches, diced
  • 4 medium jalapenos, seeded and finely chopped
  • 1 cup apple cider vinegar
  • 1.5 cups raw honey
  • 1 cup water
  • ¼ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • Pinch of nutmeg
  • ¼ teaspoon red pepper flakes

Method
 

  1. Wash and dice peaches into uniform cubes.
  2. Sauté jalapenos in a heavy-bottom saucepan over medium heat until fragrant (2 minutes). Add diced peaches and stir.
  3. Add apple cider vinegar, honey, water, salt, cinnamon, ginger, nutmeg, and red pepper flakes. Stir until honey dissolves.
  4. Bring to a boil, then reduce to a simmer. Cook uncovered for 40-45 minutes until mixture thickens and reaches 220°F on a candy thermometer.
  5. Test for doneness by placing a small amount on a chilled plate; it should gel. If too runny, simmer longer.
  6. Pour into sterilized jars, seal, and store in the refrigerator.
  7. Let sit 24 hours before serving.

Notes

Swap peaches with nectarines for a unique flavor.
Use white wine vinegar for a sharper taste.
Replace honey with maple syrup for a vegan option.
Store in a sealed container in the fridge for up to 2 weeks.
