Ingredients

  • Butterfly pea flower buds, 1 tablespoon (fresh or dried)
  • Cold-filtered water, 1 cup (240 ml)
  • Unsweetened oat milk, 1 cup (240 ml) (or unsweetened almond milk for lower calories)
  • Honey or agave nectar, 2 tablespoons (adjust to taste)
  • Fresh lemon juice, 1 teaspoon (or lime juice as a substitute)
  • Ice cubes, 6–8
  • Optional: 1–2 fresh butterfly pea flower petals for garnish

Method

  1. Place butterfly pea buds in a heat-proof container and pour cold water over them. Steep for 5 minutes then strain to remove grit.
  2. Add honey or agave to the tea and stir until dissolved. Add lemon juice and mix well.
  3. Fill a tall glass halfway with ice cubes. Pour the cooled tea into the glass, then add oat milk. Stir briskly to blend layers.
  4. Drop a fresh butterfly pea petal into the latte as a decorative garnish.

Notes

Use dried flowers but reduce steeping time to 3-4 minutes if unavailable.
Add more lemon juice to enhance blue color or adjust sweetness as needed.
Storage: Consume immediately for optimal color; refrigerate in an airtight container for up to 24 hours.
