Method
- Place butterfly pea buds in a heat-proof container and pour cold water over them. Steep for 5 minutes then strain to remove grit.
- Add honey or agave to the tea and stir until dissolved. Add lemon juice and mix well.
- Fill a tall glass halfway with ice cubes. Pour the cooled tea into the glass, then add oat milk. Stir briskly to blend layers.
- Drop a fresh butterfly pea petal into the latte as a decorative garnish.
Notes
Use dried flowers but reduce steeping time to 3-4 minutes if unavailable.
Add more lemon juice to enhance blue color or adjust sweetness as needed.
