Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup hot honey
  • 1/2 cup buffalo wing sauce (or Velveeta sauce for dairy-free)
  • 2 tbsp olive oil (or avocado oil)
  • Salt & pepper to taste
  • 6 cups mixed salad greens (e.g., romaine, arugula, microgreens)
  • 1/4 cup dried cranberries
  • 1/4 cup sliced almonds
  • 1 cup croutons
  • 1/2 cup shredded cheddar cheese
  • 1 tsp lemon zest
  • 1 tbsp hummus (optional, use red-pepper hummus for color)

Method
 

  1. Preheat oven to 400°F (200°C)
  2. Season chicken with salt, pepper, and drizzle of olive oil
  3. Place chicken on a baking sheet and roast for 10-15 minutes until crispy and golden
  4. Meanwhile, in a separate bowl, mix hot honey, buffalo wing sauce, and optional hummus to create the dressing
  5. In a large salad bowl, combine greens, croutons, cranberries, almonds, shredded cheddar, and lemon zest
  6. Add roasted chicken (chopped if desired) and pour the hot honey dressing over the salad
  7. Toss gently to coat all ingredients evenly
