Herb & Cheese Quick Bread

Ingredients
  

  • 3 cups (375 g) all-purpose flour
  • 2 teaspoons (6 g) active dry yeast
  • 1 cup (240 mL) warm water (110°F)
  • 2 tablespoons (25 g) granulated sugar
  • 4 tablespoons (57 g) unsalted butter
  • 1 teaspoon (6 g) salt
  • 2 large eggs
  • 1 cup (100 g) sharp cheddar, shredded
  • 2 tablespoons (10 g) fresh rosemary, chopped
  • 1 tablespoon (5 g) fresh thyme leaves
  • 2 cloves (10 g) garlic cloves, minced

Method
 

  1. Whisk warm water and sugar until sugar dissolves
  2. Stir in yeast; let sit until foamy 5 minutes
  3. In a large bowl, mix flour, salt, melted butter, herbs, garlic, and half the cheese
  4. Beat eggs, then whisk into flour mixture
  5. Gradually stir in yeast mixture until smooth
  6. Pour into greased 8.5x4.5-inch loaf pan
  7. Cover and let rest 10 minutes
  8. Bake at 375°F (190°C) for 25 minutes
  9. Cool 10 minutes in pan, then slice and serve

Notes

Replace cheddar with vegan cheese alternative
Use 30% whole-wheat flour for added fiber
Olive oil works in place of butter
Milk or oat milk substitutes water
Egg whites only reduces fat
Thyme or oregano replace rosemary
Storage: Wrap in plastic and freeze up to 2 months
