  • Dried rose petals, 1 tablespoon
  • Sparkling water, 4 cups
  • Fresh mint leaves, 2 teaspoons
  • Lemon zest, 1 teaspoon
  • Honey or agave syrup, optional
  • Pinch of salt

Method
 

  1. Boil 1 cup water and dissolve cotton candy syrup with half a tablespoon of honey
  2. Cool the mixture to room temperature
  3. Combine dried hibiscus flowers, rose petals, and a pinch of salt in a heat-proof jar
  4. Pour cooled syrup over the herbs, seal the jar, and steep 30 minutes
  5. Strain the infusion into a pitcher
  6. Add sparkling water, crushed mint leaves, and lemon zest before serving
