Ingredients
  

  • Chicken Breast, skin-less, boneless 1 lb (450 g)
  • Plain Gnocchi 12 oz (340 g)
  • Canned Diced Tomatoes 28 oz (800 g)
  • Red Onion, finely chopped ½ cup
  • Garlic Cloves, minced 3
  • Heavy Cream ¾ cup (180 ml)
  • Fresh Basil Leaves ¼ cup, torn
  • Olive Oil 2 tbsp
  • Parmesan Cheese, grated ½ cup
  • Salt & Pepper to taste
  • Red Pepper Flakes ¼ tsp

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Sauté red onion and garlic in olive oil until softened
  3. Add diced tomatoes and simmer for 5 minutes
  4. Stir in heavy cream, basil, red pepper flakes, and season with salt and pepper
  5. Cook gnocchi according to package instructions
  6. Season chicken with salt and pepper, then pan-sear in the sauce until cooked through
  7. Toss cooked gnocchi into the sauce and serve with chicken

Notes

Use chicken thighs for richer flavor; swap canned tomatoes with fresh for a fresher taste
