  • 1¾ cups whole wheat flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ½ tsp ground ginger
  • ½ cup vegetable oil
  • ½ cup unsweetened applesauce
  • 2 large ripe mashed bananas
  • ¾ cup plain Greek yogurt
  • 1 cup grated carrots (150g)
  • ½ cup chopped walnuts
  • 1 tsp orange zest
  • 1 tsp vanilla extract
  • Powdered sugar (optional, for dusting)

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Grease a 9-x-5-inch loaf pan and line with parchment paper
  3. In a medium bowl, whisk together flour, sugar, baking soda, salt, cinnamon, allspice, and ground ginger
  4. Blend mashed bananas, oil, applesauce, Greek yogurt, and vanilla extract in a large bowl
  5. Fold the wet ingredients into the dry until just combined
  6. Gently incorporate grated carrots, orange zest, and chopped walnuts
  7. Pour batter into the prepared loaf pan and smooth the surface
  8. Bake for 35 minutes until golden and a toothpick inserted comes out clean
  9. Let cool in the pan for 10 minutes before transferring to a wire rack
  10. Dust with powdered sugar before slicing and serving

Use all-purpose flour instead of whole wheat and add ¼ cup psyllium husk for a fiber boost
